Career Specialties
Profefssor Lentz's specialty is the study of sustainable, healthy food systems and how we promote diets and food systems that not only conserve resources and reduce environmental destruction, but also increase human longevity and wellness.
Professional and Community Activities
Lentz's research has focused mainly on two areas: amphibian diseases and conservation and the promotion of more healthy and sustainable food systems. Specifically, how the move away from animal agriculture and promotion of whole food, plant-based diets can promote environmental conservation, more efficient resource utilization, and reduction of non-communicable diseases in humans.
After completing his PhD in New Zealand, Lentz returned to Florida as an educator for a non-profit and taught students about heathy, sustainable food systems and dietary choices. In addition to formal teaching, he has also acted as an informal wellness and fitness advisor/coach for many individuals wishing to improve their overall health and wellness, both physically and mentally.
